A to Z
While in the car you pass many signs. The idea is for the family to look on signs for each letter of the alphabet (in order). Start with 'A', once someone sees an 'A' on a sign, license plate, or anything else, you move on to 'B'. You cannot get 2 letters from the same sign/license plate/etc. This game requires no preparation and is a good collaborative effort for the family.

A to Z - Version 2
Similar to the game above, but instead of looking for letters on signs - you look for thing that begin with the letter of the alphbet that you are on... "A for Acorn Tree", "B for Bicycle", etc.

20 Questions
One person thinks of something and others try to guess what they are thinking by asking questions. The goal is to guess what it is before 20 questions are asked. Strategy: Start with wide questions: "Is it a Person, Place or Thing", and then narrow down the questions as you go.

Slug Bug!
Tradionally, you would see a Volkwagon Bug and you call out "Slug Bug!" before your brother, then slug them in the shoulder. You can also keep track of points for a less physical version.

Popeye!
This is similar to Slug Bug! above, but played at night. You look for cars with a missing headlight. When one is seen, the person yells out "Popeye!" and slugs the other in the shoulder. Careful though! If it turns out to be a motorcycle, then the person slugged, gets 2 slugs against the wrong person. Again, this can also be played with points to be less physical.

Reading Outloud
Instead of sitting quietly, have your children read out loud. This refines both their reading skills and speaking skills for all ages. Dr. Seuss is great for the younger readers, and of course break out the Harry Potter series for 4th grade and above. Additional popular titles: A Series of Unfortunate Events, The Chronicles of Narnia and The Lion The Witch and The Wardrobe.
